Chicken Thigh Marinade
Easy to prepare and throw in on the cast iron. Stolen from wellplated by Erin. Easy to combine with some oven veggies and rice.
Ingredients
- 2 lbs boneless, skinless chicken thighs
Marinade
- 6 gloves garlic, chopped/minced
- 1 tbs olive oil
- 1 tbs honey
- 2 tbs soy sauce
- 1 tbs worcestershire sauce
- 1 tbs dijon mustard
- 2 ts ground cumin
- 1/4 ts kosher salt
- 1/4 ts cayenne pepper
- juice of 1 lemon (~3-4 tbs), with zest (optional)
Instructions
- Mix marinade, and toss with chicken. Marinade at room temp for 30 mins, or refrigerate 12 hours.
- COok on stove in cast iron, ~7 min per side. Break up into chunks with tongs and cook in sauce until well done.
