Lemon Cookies
Easy lemon cookie recipe. Bite-sized, soft and not too sweet, easy crowd pleaser.
Ingredients
- 1/2 cup butter
- 3/4 cup sugar
- 1 egg
- 1/2 lemon, juiced. Can substitute 2 tbs lemon juice, lime
- 1 3/4 cup flour
- 1 tbs lemon zest (optional)
- 1 ts baking soda
- 1 pinch salt
Instructions
- [Mix wet ingredients] Bring butter to room temperature, and cream with sugar. Mix in egg, lemon juice.
- [Mix dry ingredients] Mix remaining ingredients in another bowl.
- Slowly fold dry ingredients into wet ingredients.
- Refrigerate for 30 mins.
- Preheat oven to 350*F. Roll into small balls, ~20-30. Bake for 10-12 minutes.
